Orange Chicken Roast with Orange Honey Sauce :
Ingredients:
Chicken marination ingredients:
Chicken 1 kg
Milk 1 kg
Yogurt 4 tbsp
Paprika powder 1 tbsp
Salt as required
Vinegar 1 tsp
For batter:
Flour 1 cup
Corn flour ½ cup
Egg 1
Black pepper 1 tsp
Chicken tikka masala 1 tbsp
Paprika powder 1 tbsp
Garlic ginger paste 1 tbsp
Salt as required
Water 1 cup
For dry ingredients:
Flour 1 cup
Corn flour ½ cup
Salt as required
Chicken tikka masala 2 tbsp
Paprika powder 1 tbsp
Black pepper 1 tsp
Oil for frying
Bread crumbs 2 cups
For orange honey sauce:
Orange juice 2 cups
Honey 1 tsp
Hot sauce 2 tbsp
Lemon juice 1 lemon
Ketchup 2 tbsp
Salt 1 pinch
Corn flour 1 tbsp
Method:
Marinate the chicken with marination ingredientsand leave for half an hour. Then chicken coat in egg after this coat with dry ingredients and finally coat with bread crumbs. now heat oil and deep fry the chicken .after this for orange sauce all ingredients pour in a pan and add dissolve in water corn flour mix .then coat the fried chicken in sauce and serve .
Tandoori Fish Karahi :
Ingredients:
Boneless fish ½ kg
Tomato paste 2 cups
Chicken tandoori masala 2 tbsp
Salt as required
Carom seeds 1 pinch
Curry leaves 4 to 6
Crushed coriander 1 tsp
Chopped ginger 1 tsp
Green chili 2-3
Green coriander 1 tsp
Cumin 1 tsp
Dried fenugreek 1 tsp
Vinegar ½ tsp
Crushed red chili 1 tsp
Crushed black pepper 1 tsp
Oil for frying
Coal 1
Method:
In fish add vinegar,black pepper and chicken tandoori masala mix and marinate it .now in a pan heat oil and fry the fish .after this in a separate pan heat oil then add carom seeds ,curry leaves and tomato paste mix .finally add fried fish and dried fenugreek ,green coriander and green chili mix and do the smoke with coal and serve .
Turkish Swiss Roll :
Ingredients:
Vermicelli 1 packet
Sugar ½ cup
Small cardamom 3-4
Yellow food color 1 pinch
Water 1 cup
Screw pine 1 tsp
Dried milk 250 grams
Sugar 2 tbsp
Small cardamom 4-6
Almond as required
Pistachios as required
Desiccated coconut 1 cup
Cocoa powder 2 tbsp
Method:
In a wok add clarified butter. then add vermicelli then roast well. after this add sugar and water and cook. then add yellow food color, screw pine and small cardamom add and leave on dum. Then in a pan add small cardamom and desiccated coconut and make burfi. now ready vermicelli and dried milk burfi mix cocoa powder and make swiss roll then leave for 1 hour. finally add chopped almond and pistachios then serve.
Chicken Macaroni Soup :
Ingredients:
Boiled chicken 1 cup
Macaroni 1 cup
Salt as required
Black pepper 1 tsp
Chopped cabbage 1 cup
Chopped carrot 1
Chopped capsicum 1
Soy sauce 1 tbsp
Oregano 1 tsp
Spring onion 1
Corn flour 2 tbsp
Eggs 2
Oil as required
Green chili 1 tsp
Garlic 1 tsp
Cinnamon stick 1 piece
Ginger 1 tsp
Method:
In chicken add garlic,ginger ,cinnamon ,black pepper mix and make stock .now in a wok heat oil and fry garlic and green chili .after this add stock all the ingredients and sauce mix .then add vegetables and chicken .now add boil macaroni and dissolve in 1 cup of water corn flour ,and stirring slowly .finally add eggs and serve hot .
