INGREDIENTS  3 large potatoes, boiled, peeled;  150 g (5 oz) flour;  1 egg;  30 g (1 oz) shredded parmesan;  Sliced ham and cheese;  Flour, egg, breadcrumbs for coating.   METHOD  Puree 3 boiled potatoes and mix them with flour, egg and parmesan. Season with salt and pepper.  Divide potato mixture in half and roll between two oiled sheets of parchment.  Layer ham and cheese over one of the layers and cover with another one.  Cut into 4 squares and shape them with oiled hands.  Dredge each potato squire in flour, coat in egg and pass through breadcrumbs.  Fry potato squires for 5-6 minutes (around 3 minutes per side) over medium-low heat until golden and crunchy.

INGREDIENTS 

  750g potatoes   50g breadcrumbs   1 egg   100g sliced cheese   100g ham   Salt   Pepper   Rosemary   Olive oil   METHOD Boil the potatoes in plenty of water and allow them to cool completely, peel it and mash it with a fork. Add egg, salt, pepper, rosemary and breadcrumbs, mix well. Take a piece of dough and form squares.  Fill them with cooked ham and cheese, close and grease with butter. Cook them in a frying pan for 5 minutes on each side.

3) Cheesy cauliflower toast: the alternative to usual dinner!

Just a few ingredients to make a delicious toast!

INGREDIENTS  2 medium heads cauliflower;  2 eggs;  150 g (5 oz) mozzarella, shredded;  100 g (3.5 oz) almond flour;  Sliced cheese to taste;  Mayonnaise or butter.   METHOD  Shred cleaned and washed cauliflower using a blender or fine grater. Microwave cauliflower at HIGH for around 8 minutes.  Leave cauliflower to cool down until comfortable to handle, then transfer it onto a tea towel and squeeze as much moisture as possible.  Mix drained cauliflower with shredded cheese, eggs, almond flour and a generous pinch of salt and pepper.  Divide the mixture into quarters, then shape each one into a rectangle and place it on a greased baking sheet.  Bake at 200C/400F for 15 minutes, until golden. Leave to cool down for 10 minutes.  Sandwich sliced cheese between two cauliflower patties. Brush both sides with mayo or soft butter, then cook each sandwich over the medium-low heat until crispy and both sides.
