This isn't a healthy diet, of course, but its a traditional way of making certain traditional foods, such as tamales. I use a traditonal method that has been passed down to me from my grandparents, my mother, and those who have shared their methods and techniques. Although, my Jalapeno and Cheese tamales are delicious, it has a different masa using a ghee and fresh corn. These tamales are made with Masa Harina which is flavored. Getting the right flavorful texture in the masa makes the tamale a traditonal one. I have to really keep from eating these beautiful pieces of fatty pork morsels, before it gets into the masa and on the corn husk. Yum!
